Fresh Homemade Pasta


It’s 1 AM, you crave for some pasta but your room-mate used all the pasta for lunch? You open the fridge, all you see is two eggs… You’re inner self says:” Anything but eggs!”. Then you  realize the existence of Flour ( that no one uses)…
Guess what? You can make your homemade fresh pasta right now ! No need to have a pasta maker,  Those muscles will work it out ….
I’m not going to lie, you’ve got to be really starving if you decided to make these fresh pastas at 1 am! But, it’s worth the pain…
Now, you have 2 cups of flour and 2 large eggs.
In a pot, put your 2 eggs and then add gradually the flour. Mix it with your fingertips untill the ball dough feels firm and dry… It’s time to start kneading.
Kneading is the most dificult task to do, you’ll have to push down and forward the dough, rotate then do it again…
You’re almost done, now roll up the dough  as hard as you can using a rolling pin to make it flat.
Then fold it to make a roll (just like the buche cake), using a knife cut it into small pieces…
Now, all you have to do is to unroll them and cook them in a boiling water for about 15 minutes.
While you wait for the pasta to get ready, prepare your tomato sauce.

My friends have always loved my tomato sauce, I’ll share with you guys the secret behind it !

In a pan; heat 1 or 2 tablespoons of olive oil ; add the garlic then the tomato fresh juice (3 to 4 tomatoes) and the coriander. Season it with a pinch of salt, black pepper and red sweet pepper ( if you want to you can add a tiny pinch of cumin).
Let it boil for 10 minutes then add the thym and the bay leaves.
Let it cook for another ten minutes…. ready to serve!
