Moroccan Pizza with eggplants


Whenever you say pizza, you think of the classic mouth-watering italian pizza with that rich and juicy tomato sauce with melted cheese that will get strechy while eating it ! No time to wait for it to cool down, because the hotter it is the better the taste. Simply delicious, Pizza became an international star… Whether you’re italian, moroccan, american or japanese: Pizza is the symbol of good taste !

I don’t know about you, but this pizza talk makes me wanna enter my kitchen and make a personalised pizza ! How about a moroccan pizza with eggplants?

For the pizza crust: 

I chose to use flour wraps as a pizza crust ! So you may say that this is a moroccan tacos pizza with eggplants… Sounds crazy.

All you need is :
3 cups flour
1 tsp salt
1 tsp baking powder
1/3 vegetable oil
1 cup warm water

Combine flour, salt and baking powder in a bowl, Mix dry ingredients until well combined then add oil and warm water. Mix it very well !

Let it rest for 15 min.

After rest period, heat a large pan over medium-high heat. Roll each dough piece into a rough circle, keep work surface and rolling pin lightly floured. 

 
Then cook the wraps on the preheated pan for about 5 min on medium heat.
 

For the topping:

2 eggplants
2 tomatoes ( turn it into tomato juice)
Tomato paste
1 garlic clove
1tbs olive oil
Vegetables oil
1 bay leaf
1 tbs thym
1 tsp paprika
1tsp black pepper
1 tsp salt
Black olives
Cheese
1 to 2tbs Harissa (optional)

Directions:

1- Cut the eggplants and fry it in a preaheated vegetables oil.

2- In a pan, add the olive oil, the garlic and the tomato juice. Season it with salt, pepper, paprika, bay leaf and thym! Cook for 15 min…
PS: To get that moroccan taste you may add “Harissa”:  it’s a fiery and garlicky North African spice paste.If you love condiments and adding a kick of spice to your meals try the Harissa ! 

3- Spread the tomato sauce over the pizza crust, add the eggplants, top with black olives and sprinkle cheese.

4- Preheat the oven and enter the pizza in it for 5 min…
