Who doesn’t love lemon tart, with or without the meringue topping? And guess what? Lemon tart is the easiest thing ever… It needs a little time, tiny skills and loads of love !
- 185g speculos
- 1/2 tsp cinnamon
- 90g melted butter
- 3 lemons ( for juice and zests)
- 4 eggs
- 1 cup caster sugar
- 125g butter
1- Juice all lemons.
2- Combine eggs and sugar together then add lemon zests and 2/3 cup lemon juice, whisking constantly until well combined.
3-Place bowl over a saucepan of simmering water . Cook for 20 to 25 minutes and keep sttiring. Remove from heat and whisk in butter.
4-Pour lemon curd into chilled tart case. Cover with plastic wrap and refrigerate overnight.
