COUSCOUS : How to eat it in 6 ways!

When I was a child, my grandma used to make couscous for us every week…We could smell it from miles away ( I kind of exaggerated), but seriously no one would ever forget that smell… It defines our childhood!

My grandma would always leave a part of the steamed couscous dry so that we can eat it later as a “Saykouk”… This tradition is sill running in our family, but instead of making saykouk with couscous leftover I managed to take it into a whole other level…  And so I discovered other ways to use couscous!

First, I will introduce to you the two common ways of using dry couscous and then get ready to be stunned with the 3 original modern couscous recipes.

1-  Couscous with buttermilk: “Saykouk” 
Saykouk is a popular dish here in Morocco, it’s basically couscous with buttermilk.
This dish is usually served cold to help battle the heat. I found it pretty refreshing especially when it’s hot outside… (  in summertime)
2-  Sweet Cousous:
This one is my favorite, it can boost our metabolism and help us fight fatigue. It’s the perfect snack after gym, once you try it you feel alive again !
So the idea is mixing butter, sugar and cinnamon all together with couscous… It goes perfetly with a glass of milk.

 So, lately I’ve been telling my grandma that Couscous have all what it takes to be turned into a salad. She didn’t beleived me when I said it, she thought that I was joking.
 It’s difficult to make older people realize that couscous can be turned into a delicious salad… Especially if you lived your whole life thinking that couscous is the one crowned with vegies which you eat on Fridays…
3- Mango & Cucumber salad Couscous 
This is the perfect summer recipe: refreshing, colorful and exotic. It surely brings a modern twist to the original recipe!
It was the first recipe that I published here on the blog and the feedback was great! Everybody loved the idea and even tried it at home…

4- Tomato Couscous salad: Tunisian style ( Tabboula)

For those who like to mix flavors, try this easy salad. It’s made of cherry tomatoes, corn coriander and dry raisins.

It looks messy?
Trust me it will be perfect after adding the vinaigrette. The special vinaigrette will link each ingredient and create a well balanced flavor!
PS: the vinaigrette is the same as the one in the recipe 3 ( Mango & cucumber couscous)
5- Couscous with Tomato sauce:
This one was supposed to be a couscous with Harissa, but I hate the spicyness in Harissa…
So, I chose to turn it into a couscous with tomato sauce!
The sweetness of green bell pepper makes a great mix with chikpeas and the tomato sauce.
As a tomato sauce lover, this one was definitely the best way to taste it.

6- Couscous Sushi: 

This recipe was inspired from Japan, It’s the moroccan kind of sushis! 
I was reading about japanese cuisine and I just came up with this crazy idea… So feel free to add anything to your steamed couscous, maybe you can turn the couscous salad into couscous salad ROLL 😀 Go crazy ! Be wild in the kitchen … then you just roll your mixture using a plastic roll freeze it and cut it into small pieces…  For more details chech the recipe

1- The whole package please!

 It puts together salty-sugary-acidic food!   Those who love this type of breakfast are not  sure which food to choose; their motto is ”if you can’t select then choose the whole package! ” 

2- Sunday morning!

Olives have bitter taste and they’re very #healthy! For this kind of breakfast, you would take your time to taste the olive bitterness… it’s perfect for long sundays’ morings! No work, No tensions, it’s just you and the olives … 


3- Home alone!


Sweets +  cookies + candies + sugar overload= HOME ALONE!
Single boys living far away from home would relate to this … too lazy to make a proper breakfast, they just jump out of bed and take cookies… the easiest option for harried morings but also the fastest way to get diabetes!


4- Back to school!


Grap your backpack and books, this breakfast is all about Toasts that you’ll probably forget in the toaster…still! you’ll spread them with nutella ( after taking a couple of Nutella spoons…).


Heat the milk that will boil over the stove… Burn yourself while drinking the milk that you won’t finish for sure, and finaly take away the milk’s taste by drinking orange juice but mostly to cool down the burns….


5- GO Vegan!

Whether you’re vegan for health reasons, moral choice or you’re just trying to follow the new trend #vegan ! Your kind of breakfast will be like: oatmeal, fruits, soy milk… No regular milk, No cheese, No eggs, No white sugar, No cakes, No orange juice ( unless it’s pure… OK seriously?)…. NO... NO….


6- Allergic to mornings!

If you totaly relate to this: Probably the first thing you think about is coffee,  you’re far away from being a morning person and you don’t need me to tell you that; But coffee is litteraly taking over your life!
Warning for the morning people, don’t you ever try to start a conversation with a non morning person at 8 am!


7- International LOVE!

Foreign breakfasts, from the french ”pain perdu” or crêpes to the japaneese “tamagoyaki”… Maybe you prefer Going british (white beans) or going turkish (tomatoes and other vegies…)

if you relate to this then you’re most likely to be curious and brave to try new things and ways in life. Or you’re just madly in love with a particular culture!

8- Guilty pleasure!

Dark Chocolate fuels happiness, you’re aware that your relationship with chocolate is wrong. You keep it for the simple reason that you can’t end it, but maybe it’s not that wrong!
Cheer up chocolate lovers;  Studies proved that eating a certain amount of chocolate can be healthy. In fact, chocolate contains a wide assortment of vitamins and minerals that the body needs! 


9- Dinner is the new breakfast! 

It’s seems crazy but it’s not different from eating breakfast for dinner… Sometimes people can eat their yesterday’s dinner, not for lunch but as a breakfast LADIES AND GENTLEMEN! 
Shout out to all those who will eat anything at anytime without knowing if it’s breakfast, lunch or dinner… they have no concept of TIME and we love it ! 

10- Oldschool never dies!

Well, if you having this kind of breakfast then you’re finaly home on a vacation, or your celebrating eid  Haha.  Anyways, This is the most enjoyable typical moroccan breakfast that you’re only eating when you’re at your parents’ house: Homemade baghrir, meloui, bread and krichlat! Not to mention the perfect moroccan mint tea :3

This makes me wanna go and make some baghrir for afternoon… Craving for home taste!

5 recipes’ ideas with Leftovers

As a student who’s living along, I have this problem with leftovers. I tend to cook a big amount of food thinking that I will finish all of it but then I end up with an unfinished plate ( NO Mom isn’t gonna blame me for that… at least she won’t be reading this haha) .

Anyway, I’m sure that you have the same problem. So what if I told you that your leftover food can be turned into a fancy yummy dish? No one will figure out that it was basically last night’s dinner !

1- Chicken:

You can do so many things with chicken leftovers, you may eat it cold or heat it up again for a better taste. You get to chose:

Wanna take the healthy way? Make a chicken salad with anything you want! This one is an easy quick chicken tomato salad with cheese.

Wanna raise the level? Go for chicken tacos! it’s basicly eating a salad wraped in tacos wrap topped with a hot sauce 😀

2- Rice 

I eat rice a lot, it’s my subtitution for bread. My fridge always contains cooked rice, so I have always to figure out how to use it in a different maybe exotic way…
My solution for this one is by making stuffed vegies ( tomatoes or bell pepper …) using rice leftovers. It’s simple and easy to make ….

3-Bread :

When I was young,sundays’ morning were my favourite; My mom used to make French toast ( Pain
perdu) using bread leftovers and we would drink it with moroccan green tea. ( Sweet Memories)
So, everytime I’m making french toast it reminds me of home.

 4- Vegetables: 

Give your vegetables another chance by turning them into a vegies’ grattin. You can use any kind of vegetables you’ve got in your hand.

Add some cheese, maybe some past too et le tour est joué !

 5- Spaghetti: 

We saved for you the best for the last, this is the perfect way to use pasta leftovers is to make a pasta frittata with it !
We just love it !
Trust me It’s way more delicious than the original dish… You just need pasta, some eggs and coriander And feel free to add anything else you want. Let your imagination take over…
